What IS Vegan Badassery? This.
I’m not usually drawn to what some might call a crunchy hippie way of dining – but I must say…when it’s done well, it’s done WELL.
Nick and I tracked down the Gmonkey Mobile at the Billings Forge Farmers’ Market last week. After hearing such enthusiastically positive feedback from friends (including unabashed carnivore buddies), I know I had to order the truck’s infamous burger.
A great decision indeed. This beautifully seasoned black bean chipotle burger came smothered with toasted pumpkin seed pesto, vegan cheese & housemade catsup. Wow. Toss in some veggie chips for a tastebud’s dream come true.
As if that wasn’t enough vegan badassery, we finished up with sweet raw date squares with sprouted nut crust (you can see it peeking in the background of above photo. It was a bit shy but we soon showed it who’s boss). A balanced meal and a downright tasty meal. For food truck dining, this beats ‘em all.
